If you’re a daiquiri lover, then you probably already know the name “El Floridita”. Known as La Cuna Del Daiquiri, this is indeed the spiritual home of the frozen daiquiri. The Hemingway connection has turned this 200-year-old bar into a bit of a tourist mecca (you’ll see a bronze statue of Papa propping up the counter), but it’s a lot more than that. El Floridita has a long and illustrious history of cantineros culture. Starting with Don Narciso Sala Parera, who in the 19th century trained his staff to mix drinks the old-fashioned way, the bartenders’ skill here has ensured that the Floridita has endured for generations. In the mid 20th century, the legendary Constante continued the cantineros tradition with panache, inspiring colleagues to form a professional bartenders association, the Club de Cantineros de Cuba. What this means is that even today your daiquiri will be exquisitely made by a consumate pro. Have one before dinner, then head over to Doña Eutimia, where Leticia has developed a very traditional Cuban menu based on memories of her mother’s dishes. This charmingly homey paladar is located opposite an artist’s workshop close to Cathedral Square.
